

Spoon 2 inch cookies onto a parchment or wax paper lined cookie sheet. Line a baking sheet with parchment paper and set aside In a small heavy sauce pan over low heat bring the butter and sugar to a boil, stirring occasionally. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars on medium speed until light and fluffy, about 3 minutes. Pour butterscotch sauce over corn flakes and toss to coat. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Try to use one larger than you think you need. That entire 10+ hour journey seemed totally worth it when we would pull down the pine tree lined driveway and run into the house to find the cornflake cookies. Place Corn Flakes cereal in a large mixing bowl. Nothing really worked, but I guess it helped to pass the time. One with only butter (this recipe), and another (the original) with butter or margarine and shortening. Once the peanut butter has melted pour the liquid mixture over the cornflakes. Stirring until the peanut butter is melted into the sugar and corn syrup mixture. Remove the mixture from the heat stir in the salt and peanut butter.

Note: I have TWO versions of this recipe. These butter-rich cookies are rolled with crunchy cornflakes so every bite is a perfect crunch. Bring the mixture just to a boil, but don't let boil for long.
